Peachy Pops

A wonderful, creamy smoothie on a stick.

Serves 10

  • 1 1/2 cups 8th Continent Vanilla soymilk
  • 2 cups frozen sliced peaches, partially thawed
  • 3 teaspoons honey
  • Ten 3-ounce paper cups
  • Foil
  • 10 craft sticks (flat wooden sticks with round ends)


Place the soymilk, peaches, and honey in a blender. Cover; blend on high for about 1 minute, or until smooth.

Place the paper cups in a rectangular pan; pour the mixture into paper cups. Cover the top of each cup with foil; insert a stick through the foil into each pop. Freeze for 2 to 3 hours, or until firm.

Per serving, about: Calories 56, Protein 1 g, Carbohydrate 12 g, Dietary Fiber 1 g, Total Fat 0 g, Saturated Fat 0 g, Cholesterol 0 mg, Calcium 48 mg, Sodium 26 mg.
